About Penascos!    Penascos Mexican Restaurant was established in November 2006 and is proud to be Maricopa’s Finest Mexican Cuisine Restaurant. Penascos is named after the popular vacation beach town of Puerto Penasco in Mexico. The name symbolizes the relaxing and enjoyable atmosphere of Puerto Penasco and provides our patrons with an escape from the everyday burdens of life. Our goal is to provide you and your family with authentic mexican cuisine in our Romantico, Latino Atmosphere! Rosalinda Galindo is the founder of Penascos Mexican Restaurant. She is passionate about her restaurant and is proud of her heritage and brings her rich Mexican flavor into all of her recipes. Rosalinda makes herself available to speak with customers frequently to always make them feel welcome in her Casa. Penascos specializes in special events, corporate events, weddings, quinceaneras and caterings. We can accomodate up to 97 guests in the restaurant and 47 in our beautiful outdoor patio.
